Tried-and-True Tested Pinterest Recipes We Love
I’ve gotten pretty bored with our HEB orders lately. I thought the arrival of hatch chile season would make up for some of that monotony that we’ve found ourselves stuck in. Sadly, it didn’t get me as excited as I had anticipated it would. Awhile back, we got in a bit of rut where for weeks our meals seemed very similar and for some reason we can only remember the existence of 4 restaurants to do take-out from. Needless to say, we needed a change of food scenery. Surprisingly, one of my COVID side projects came to the recipe rescue.
The COVID Side Project I Have Come to Love
I signed up for Pinterest as soon as I discovered it and was able to get on the platform. I’ve racked up a ton of pins over the years with literally thousands of those centered about food. I’ve always had trouble scrolling to find a recipe I’d tried and loved or would get frustrated with broken links. I knew that I’d love to get it under control with some better organization, but never under ordinary circumstances would I have had the time or devoted the time to it. During COVID it has become a side project for me as we stream a ton of different TV shows that we never watched or are re-watching. TV aglow, I have gone through and organized thousands of food recipes, deleted duplicates and broken links, and made sub-categories of different boards.
It’s been the weirdest pandemic time suck, but I have absolutely loved the outcome. I no longer fear accidentally closing a recipe and never being able to find it on one of my own Pinterest boards again. I love being able to see what we’ve got and find an easy recipe that will give a twist on it. Plus, we’ve started trying some new recipes that we’ve really enjoyed which has been such a nice change.
Give Me Those tried-and-true tested Recipes!
Chicken Shawarma Salad - We eat this one all the time. We refer to it as Ashley’s Fave Salad now in our home. I will gladly eat it at least twice a week for the rest of my days.
Mexican Street Corn Salad - We discovered this one back in June and loved the fresh summery feel of it.
Julia’s Veggie Mix - This veggie mix covered in basil with mozzarella balls is a favorite of mine. It’s a great veggie mix, and I can’t say no to fresh basil.
Italian Stuffed Zucchini Boats - Zucchini boats proved to be easier to do than I thought. I love the change from normal zucchini we get with this meal.
Garlic Mushrooms - Rick loved these so much when we ate them last week that they’re back on the menu for this week. I love the fact that we can use some of our fresh thyme for them too.
Zucchini Casserole - This casserole is one of our most recent finds where we’ve been trying to do more meat-less meals. I was a little wary of it, but I gladly helped myself to seconds and I can’t wait to try it again.
Chicken Burgers with Avocado Salsa - I love this meal. It could easily be done without the salsa on top, but that’s a huge disservice to the meal.
Salmon Sushi Bowl - Our favorite sushi place is almost an hour away. This recipe helps us on those nights we want to get our sushi fix, but don’t want to do that drive.
Mexican Quinoa Stuffed Peppers - This has been a healthy meal we return to fairly often because it makes a great lunch.
Chocolate Chip Cookies - I thought about keeping this one to myself because it’s one of those best-kept secret kind of recipes that you stash in your back pocket to impress your friends, but it really is too good to not share.
